The shrimp samples were obtained from Hormozgan and were sent to the microbiological laboratory. Bacterial contamination of shrimp were determined by counting the aerobic mesophil bacteria, Staphylococcus areus, Choliforms, Vibrio parahemolyticus and Salmonella. The shrimp samples were irradiated at different doses of gamma ray. Finally, the optimum dose of the gamma ray for bacterial decontamination of shrimp, especially of Vibrio Parahemolyticus, was obtained to be 2kGy. Also, the chemical factors of irradiated and non-irradiated samples such as Protein, Fat, total volatile Nitrogen (TVN), Non Protein Nitrogen (NPN), Peroxide Value (PV) and Amino Acids were measured. There were not any important difference among them. Also, there were not any significant difference between TVN and Peroxide Value (P>0.05) for the irradiated and non-irradiated shrimp samples. Study of bacterial contaminations of the irradiated and non irradiated samples after 12 months showed that irradiation by 2kGy can control the microbial contaminations. Four types of films for packaging: Pet.pe, Pp.pe, Bopp, and Pe.20 were used for storage of the irradiated and non irradiated shrimp samples in-18°C during 12 months. All of the packages were studied on the aspects of color, odor, tissue and taste of shrimp samples and elasticity and pressing of packages. For the irradiated and non irradiated shrimp Pet.pe and Pp.pe were preferred, respectively.}, keywords = {Shrimp,Bacterial Contamination,Gamma radiation,Packaging}, title_fa = {تأثیر پرتو گاما بر آلودگی‌های باکتریایی و خواص حسی میگوی سفید منجمد هندی}, abstract_fa = {میگو یکی از محصولات صادراتی مهم کشور است که از نظر تغذیه و اقتصادی مهم می‌باشد. به دلیل فاسد شدن سریع این محصول، استفاده از روشی که بتواند بدون ایجاد اثرات منفی کنترل آلودگی‌های میکروبی این محصول را امکان‌پذیر سازد، بسیار حایز اهمیت است. در این کار تحقیقاتی، پرتودهی محصول میگوی استان هرمزگان به منظور کنترل آلودگی‌های میکروبی آن انجام شد. نمونه‌های مورد آزمایش از کارگاه‌های فرآوری و بسته‌بندی میگو در بندرعباس و هم‌چنین از مزارع پرورش میگو در استان هرمزگان تهیه شده و به صورت منجمد به آزمایشگاه میکروب‌شناسی پژوهشکده کشاورزی، پزشکی و صنعتی کرج انتقال داده شد. آن‌گاه، آلودگی‌های باکتریایی میگو به لحاظ تعداد باکتری‌های مزوفیل هوازی، استافیلوکوکوس آرئوس، و کلی‌فرم‌ها، تعیین وجود یا عدم وجود ویبریوپاراهمولیتیکوس و سالمونلا مورد بررسی قرار گرفت. نمونه‌ها تا دزهای مختلفی پرتودهی شده و آلودگی‌های باکتریایی نمونه‌ها مجدداً بررسی گردید. بنابراین دز مطلوب برای کاهش این آلودگی‌ها و به ویژه برای از بین بردن آلودگی باکتریایی ویبریوپاراهمولیتیکوس در میگوی فرآوری شده و فرآوری نشده، برابر 2 کیلوگری تعیین گردید. بررسی آلودگی‌های باکتریایی میگو پرتودهی نشده و پرتودهی شده پس از یک سال نشان داد که دز 2 کیلوگری پرتو گاما به خوبی این آلودگی‌ها را کنترل نموده و باکتری ویبریوپاراهمولیتیکوس را نیز از بین می‌برد. چهار نوع بسته‌بندی متفاوت (Pet.pe-Pp.Pe-Bopp-Pe.20) برای نگه‌داری نمونه‌های میگو به مدت یک سال و در دمای ºC18- با تکیه بر خواصی چون رنگ، بو، بافت، طعم میگو و شکنندگی و دوخت‌پذیری بسته‌بندی بررسی گردید. بسته‌بندی Pet.pe برای نگه‌داری میگو پرتودهی شده در دمای انجماد و به مدت 12 ماه به لحاظ جنس مناسب تشخیص داده شد ولی برای میگوی پرتودهی نشده جنس بهتر، از آنِ بسته‌بندی Pp.pe می‌باشد.}, keywords_fa = {میگو,آلودگی های باکتریایی,پرتو گاما,بسته‌بندی}, url = {https://jonsat.nstri.ir/article_451.html}, eprint = {https://jonsat.nstri.ir/article_451_e0a07ba9655d61c30364ec32787935b8.pdf} }
